Aven Lau


Following in the footsteps of Executive Chef Nicolas Boutin is Chef de Cuisine Aven Lau, who skillfully presents classic dishes with innovative twists, creating lasting visual and gustatory memories with exceptional flavours and striking presentations. He brings to ÉPURE a wealth of culinary experience amassed at several of Asia’s most lauded dining institutions, including three-MICHELIN-starred Odette in his hometown of Singapore (no. 6, Asia’s 50 Best Restaurants 2023), as well as Hong Kong’s one-MICHELIN-starred Belon.

Sebastien Allano


With 20 years of experience as an esteemed sommelier, Sebastien's journey in the world of wine began at the age of 14 at Lycée Chaptal de Quimper, a prestigious hotel and restaurant school in France, where he obtained a Master Sommelier degree. He then went on to work at renowned establishments such as La Tour d'Argent in Paris (Two MICHELIN Stars), Le Manoir aux Quat’Saisons in England (Two MICHELIN Stars), Daniel (Two MICHELIN Stars), and Le Bernardin in New York (Three MICHELIN Stars), George V in Four Seasons Paris (Three MICHELIN Stars), as well as Lung King Heen (Three MICHELIN Stars) and Caprice (Three MICHELIN Stars) in Four Seasons Hong Kong.

In 2017, Sebastien joined Gourmet Dining Group as Wine Director, continues to create the perfect pairing experience for our guests.
